Roasted Veggie Sandwich

I’m not someone who typically craves vegetables, but after the holidays this year I actually found myself looking to incorporate them into more of my meals. I ate a lot over Christmas and have been feeling in need of a detox ever since. This roasted veggie sandwich is warm and filling, while still being relatively good for you. I think it tastes great and definitely leaves me feeling satisfied. Best of all, it’s super easy to make!

Roasted Veggie Sandwich

  • 1 slice of bread
  • 2 tbsp. hummus
  • 1 slice of swiss cheese
  • 2/3 cup roasted vegetables


  1. Toast the bread
  2. Spread hummus on one of the toasted slices and lay the swiss cheese on top
  3. Top with roasted veggies

The best thing about this recipe is that you can customize it to your preferences. I opted for gluten-free bread, swiss cheese, regular hummus, as well as a mix of roasted bell peppers, zucchini, and mushrooms; but you could use all different ingredients for an equally delicious sandwich. I also opted to serve mine open faced as a way to cut down on bread and calories, but you could easily turn this into a traditional sandwich.

I typically roast 1 zucchini, 2 bell peppers, and a few handfuls of mushrooms with a bit of olive oil and garlic powder over the weekend and use them to make sandwiches throughout the week. It’s the perfect amount of vegetables and they stay fresh the entire week. The savory flavours are perfect for cold winter days! I actually find this sandwich tastes like more of a treat than something packed full of veggies!
