Up until recently I thought I hated guacamole. I had never really tried it, but I was never an avocado fan and the look of it was just off-putting to me. When I was out for drinks with a friend a few weeks ago she wanted to get guacamole for an appetizer so I decided to actually give it a try.
I ended up loving it and since have even made it at home a few times. While I feel like guacamole is more of a summer food, it has been a nice treat in the winter months so I thought I would share my recipe with you guys even though summer seems so far away.
This recipe is super easy to whip up and tastes great. This recipe serves two, but you could easily double it to make more.
What you’ll need:
6 cherry tomatoes, diced
2 cloves of garlic, minced
the juice of half a lime
salt, to taste
Simply mash up the avocado in a bowl and mix in the other ingredients until everything is well incorporated.
Serve with tortilla chips.
