Greek Salad For One

I have mentioned before that I have been trying to eat better. I’ve been spending a lot more time in the kitchen and have come up with some recipes that I’ve really been enjoying lately. Lunch is the meal I struggle with the most, but this salad with homemade greek dressing is the perfect option, especially when I’m in a hurry. It tastes really fresh and doesn’t take long to whip up!

What you’ll need:
2 tbsp olive oil
2 tbsp apple cider vinegar
1 tbsp lemon juice
1 clove garlic, minced
¼ tsp sugar


Simply whisk together all of the ingredients and pour over your salad. I like to use romaine lettuce, cherry tomatoes, cucumbers, and feta, but you can play around with ingredients.

    I love fetta, I use it all the time, even in my sandwiches! If you like avocado, try it in your salad with fetta, it’s a great combination! I am from Cyprus and our kitchen is similar to the greek kitchen!

  • This looks delicious! I do a similar dressing, only I didn’t add in the garlic. I will try that next time! I love putting this over a salad of chopped cucumbers, tomatoes, avocado, and spinach. Thanks for sharing!
