If you’ve been reading my blog lately, you’ll know I’m currently obsessed with muffins! They’re perfect for breakfast or to have as a snack; so I’ve been enjoying keeping a batch on hand. I’m trying to completely cut out soy because it bothers me; however I also find I feel better when I limit my gluten intake. I’m not allergic or even intolerant, but eliminating it from my diet a couple days a week makes me feel better (more energy, less bloated, etc.) so I have been trying to perfect my gluten-free muffin recipe. That being said; today I’ll be sharing the recipe for my gluten-free apple cinnamon muffins!
I used the Sugar-free Muffin Mix* from Namaste Foods because it’s free of soy, gluten, sugar, dairy, and more! I basically took the mix and added in 2 apples (diced up, of course), 1 teaspoon of ground cinnamon, and 2 tablespoons of brown sugar.
Overall, they weren’t bad, though I’m still on the hunt for the perfect recipe! Next time I’m going to try adding in a bit more sugar and perhaps substituting the water that goes into the muffin mix with juice to give the muffins a bit more flavour. Aside from that, the batter mixed up easily and baked well; I just need to play around a bit more.
If you like a more subtle flavour or are really looking to reduce your sugar intake; I think you’d like this particular recipe.
