Gingerbread Muffins

I mentioned a little while ago that I’ve been on a real muffin kick lately, and it doesn’t seem to be showing any signs of stopping. My latest obsession are these gingerbread muffins!

These muffins are a bit spicy and go so well with a hot cup of coffee! I love how festive they are, too.

Gingerbread Muffins

Yield: 1 dozen


  • 2 1/2 cups all-purpose flour
  • 3/4 cup brown sugar
  • 1 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 1 tsp. ground ginger
  • 1/4 tsp. ground cloves
  • 1/4 tsp. salt
  • 1 tsp. vanilla extract
  • 2 large eggs
  • 100 ml canola oil
  • 100ml milk
  • 5 tbsp. molasses


  1. Preheat your oven to 350˙
  2. Line 12 muffins cups
  3. In a large bowl combine in the flour, sugar, baking powder, cinnamon, ginger, cloves, and salt
  4. In a medium bowl combine the eggs, vanilla extract, oil, milk, and molasses
  5. Add the wet ingredients to the dry until just combined - don't over mix
  6. Evenly distribute the batter among the muffin cups
  7. Bake for 28-30 minutes

These muffins are full of anti inflammatory ingredients like cinnamon and cloves while ginger helps combat any stomach problems. The muffins are quite dense, but are super filling, which makes them a great breakfast for me!
